Nuremberg has its own beer identity: Nuremberg Rotbier, a bottom-fermented, copper to amber-coloured beer with a malt-forward character. Nuremberg's Beer History: Rotbier and Rock Cellars
Nuremberg was one of the great free imperial cities of medieval Europe. It had its own rules, trade networks and brewing culture. As early as 1303, the city council regulated the use of barley for brewing, long before the Bavarian Reinheitsgebot.
The historic Nuremberg beer style is Rotbier. It is not a top-fermented ale, but a bottom-fermented beer. That matters: Nuremberg Rotbier is an old, distinctive style linked to cold fermentation, barley malt and long storage in the city's rock-cut cellars.
Below Nuremberg's old town lies a network of historic Felsengänge, rock-cut passages and cellars. These cellars were used for beer storage and maturation. In the late 14th century, Nuremberg had more than 40 breweries, and anyone who wanted to brew and sell beer had to own a cellar for storage. Beer in Nuremberg was not just a drink, but part of the city's architecture.
Nuremberg Rotbier
Rotbier is copper-red to amber, malt-forward, round and gently hopped. It is not smoky like Bamberg Rauchbier, not as yeast-fresh as Kellerbier from Fränkische Schweiz, and not as neutral as a Helles. It is Nuremberg's own style.
If you drink only one beer in Nuremberg, make it a Rotbier. Start at Altstadthof, because that is where the historical context is strongest: brewery, taproom and rock-cellar tours are all in the old town.
Hausbrauerei Altstadthof
Hausbrauerei Altstadthof was founded in 1984 in Bergstraße, on the historic site of the former Rotes Brauhaus. It brews in the old town of Nuremberg with a strong craft focus and organic raw materials. The Rotbier is the flagship: copper-coloured, soft, spicy and malt-forward.

Schanzenbräu
Schanzenbräu is a modern Nuremberg private brewery with roots in Gostenhof. Production is now based in Nuremberg-Höfen. Its Rotbier is unfiltered, red-gold, malt-aromatic and more hop-accented than many classic versions. For visitors, it is the best second Rotbier address after Altstadthof.
Tucher
Tucher is the large traditional Nuremberg brand. Its roots go back to 1672, when the city council established the Städtisches Weizenbräuhaus. Since 2004, Tucher has belonged to the Radeberger Group. Today it represents the large-scale Nuremberg/Fürth beer tradition, with a two-city brewhouse sitting directly on the city border.
Original Tucher Nürnberger Rotbier is bottom-fermented, amber-coloured and brewed to 5.5% ABV. It is not the same experience as drinking Rotbier at Altstadthof, but it shows that the style also lives on at larger scale.
Orca Brau and Modern Beer Culture
Nuremberg also has a small modern craft beer scene. Orca Brau stands for more experimental beers, modern ales and creative interpretations of Franconian styles. This does not turn Nuremberg into a craft-beer capital, but it shows that the city's beer culture is not only historical.
The Nuremberg Volksfest
The Nuremberg Volksfest takes place twice a year at Dutzendteich: as the spring festival and as the autumn festival. The 2026 autumn Volksfest officially runs from 28 August to 13 September. It is a large Franconian fair with rides, stalls, beer gardens and beer-tent atmosphere.
This is not an Oktoberfest clone. It is more local, less internationally staged and more closely tied to Nuremberg. If you visit the city in late summer, this is the large urban version of Franconian festival beer culture.

Nuremberg is not Bamberg. That is not a weakness. Bamberg is denser, smaller and stronger in brewery concentration. Nuremberg is more historical, more urban and more practical as a base. For a Franconian beer trip, Nuremberg is not a substitute. It is the entry point.
