One day in Bamberg is enough for a good selection of four or five brewery stops on foot, but not for all active breweries in the city. A sensible route is: Schlenkerla at Dominikanerstraße 6, Spezial at Obere Königstraße 10, then Mahrs Bräu at Wunderburg 10 and/or Keesmann at Wunderburg 5. For the final stop, Fässla at Obere Königstraße 19-21 is practical on the way back towards the station. Greifenklau at Laurenziplatz 20 is a worthwhile optional detour, but it is not open every day.

Bamberg has more active breweries than you can visit sensibly in one day. This route is therefore not a complete list of all breweries. It is a practical day route to several key brewery taverns: smoked beer in the old town, classic breweries in the Wunderburg district and an easy final stop towards the station.
The route works best from Tuesday to Friday. On Saturdays some places close earlier; on Sundays and Mondays some stops do not work at all. Always check current opening hours directly with the businesses before setting off.
The Route: Step by Step
10:00: Arrive at Bamberg Station
Most visitors arrive by train. From the station, walk towards the old town. Fässla is close to the station on Obere Königstraße and works well as a final stop, so do not get stuck there too early. Old town first, beer after.
10:30: Bamberg Old Town, First Impressions
Bamberg has been a UNESCO World Heritage Site since 1993. The old town, with its hill town, island town and market gardeners' district, is exceptionally well preserved. Walk towards the Old Town Hall and the Regnitz, then continue to Dominikanerstraße. That is where the classic Bamberg beer moment begins.
11:30: Schlenkerla
Schlenkerla is the essential stop if you are visiting Bamberg as a beer city for the first time. The historic smoked beer brewery is at Dominikanerstraße 6. Its famous Aecht Schlenkerla Rauchbier is traditionally served straight from oak barrels. If you want food, Franconian dishes such as Schäuferla or Bamberger Zwiebel fit well here, but give yourself enough time.

13:00: Brauerei Spezial
Spezial is Bamberg's other major smoked beer stop. The brewery is at Obere Königstraße 10. Compared with Schlenkerla, Spezial often feels a little quieter and less tourist-heavy, but it is still a central classic. For Rauchbier fans, the direct comparison is the point.

14:30: Wunderburg: Mahrs Bräu and Keesmann
Next, head to the Wunderburg district. Mahrs Bräu and Keesmann are almost next to each other. Mahrs Bräu is at Wunderburg 10 and is especially known for its natural ungespundetes Kellerbier aU. Keesmann is at Wunderburg 5 and is best known for Bamberger Herren Pils.
If you can only manage one more stop, decide by taste: Mahrs for Kellerbier, Keesmann for Pils. If you want to do both, keep the pace low and do not automatically order a full Seidla everywhere.

16:30: Greifenklau, Optional
Greifenklau is at Laurenziplatz 20 and is a good detour if you still have time and energy. The beer garden is especially attractive in good weather, but Greifenklau is not simply a seasonal-only place. It has regular opening hours, but also rest days. Check before walking up.

18:00: Fässla or Back to the Station
Fässla is at Obere Königstraße 19-21 and is convenient from the station. As a final stop, it works especially well if you are taking a train later in the evening. Known beers include Lagerbier, Pils, Weizla and Bamberger Zwergla.

Is One Day Enough?
For a first beer overview: yes. For Bamberg properly: no. The distances are manageable, but every brewery deserves time, food, water and pauses. If you really want to experience Bamberg, stay overnight. If you only have one day, do fewer stops properly rather than too many in a rush.
