Bamberg has an unusually dense beer culture. Bamberger Brauereien e.V. lists nine classic private breweries: Ambräusianum, Fässla, Greifenklau, Kaiserdom, Keesmann, Klosterbräu, Mahrs Bräu, Schlenkerla and Spezial. Not every well-known beer place in Bamberg is an active brewery: Wilde Rose Keller is a beer cellar, while Bamberger Hofbräu is today mainly a restaurant and a historic beer brand.

Why Bamberg Is Different
Bamberg is not a city with just one famous beer. It has several independent breweries, brewery inns, beer cellars and a beer culture strongly connected with daily life, city history and Franconian food. The old town has also been a UNESCO World Heritage Site since 1993.
But the distinction matters: not every famous beer name in Bamberg is an active brewery today. This guide focuses on the classic breweries and brewery inns that visitors can realistically understand and visit.
The Breweries in Detail
1. Schlenkerla
Schlenkerla is Bamberg's best-known smoked beer address. The historic brewery tavern at Dominikanerstraße 6 was first documented in 1405 according to Bamberg Tourism. Aecht Schlenkerla Rauchbier Märzen is a bottom-fermented Märzen with a clear smoke and malt character. The smoky flavour comes from smoked malt produced in the brewery's own maltings.
What to order: Aecht Schlenkerla Rauchbier Märzen. Seasonal beers such as Urbock or Fastenbier only at the right time of year.
Address: Dominikanerstraße 6, 96049 Bamberg
Note: Schlenkerla lists year-round daily opening hours. Check special times at Christmas, New Year and public holidays.
2. Brauerei Spezial
Spezial is Bamberg's other major smoked beer address. The brewery inn is at Obere Königstraße 10, convenient from both the station and the old town. Spezial is especially interesting if you want to compare Schlenkerla and Spezial directly: both are smoked beer, but with different character.
What to order: Spezial Rauchbier Lager or Märzen. According to Bamberg Tourism, Spezial Ungespundetes is the Spezial beer made without smoked malt.
Address: Obere Königstraße 10, 96052 Bamberg
Note: short Saturday opening, check current times before visiting.
3. Mahrs Bräu
Mahrs Bräu is located at Wunderburg 10. The brewery is best known for aU, its natural and unbunged Kellerbier. Bamberg Tourism describes Mahrs as the source of U and notes that the Ungespundetes is still tapped from wooden barrels in the brewery inn and, in summer, in the beer garden.
What to order: aU, the unbunged Kellerbier. Then Bamberger Helles if you want a comparison.
Address: Wunderburg 10, 96050 Bamberg
Note: opening hours vary by weekday, check before visiting.
4. Brauerei Fässla
Fässla is at Obere Königstraße 19-21, practically between the station and the old town. The brewery has its inn and guest rooms in the same building. Beers include Lagerbier, Gold-Pils, Weizla, Zwergla and the seasonal Bambergator.
What to order: Lagerbier or Zwergla. During bock beer season: Bambergator.

Address: Obere Königstraße 19-21, 96052 Bamberg
5. Brauerei Greifenklau
Greifenklau is located at Laurenziplatz 20. It is not a summer-only place: it has regular opening hours, but also rest days. The large beer garden with views towards the Altenburg is especially popular. Bamberg Tourism lists beers including Lager, Weizen, seasonal bock beer, Zwickel, Märzen, Greif-R and Laurenzi.
What to order: Lagerbier or a seasonal beer if available.
Address: Laurenziplatz 20, 96049 Bamberg
Note: closed Sunday and Monday according to the brewery website, beer garden weather-dependent.
6. Brauerei Keesmann
Keesmann is at Wunderburg 5, almost next to Mahrs. Its best-known beer is Bamberger Herren Pils. Bamberg Tourism also lists Helles, Sternla, Hefeweizen, Josephi-Bock, Keesmann Bock and Keesmann Gold as further or seasonal beers.
What to order: Bamberger Herren Pils. If you prefer something less hop-focused: Helles or Sternla.
Address: Wunderburg 5, 96050 Bamberg
Note: closed Sunday, Saturday only open during the day. Check holiday closures.
7. Klosterbräu Bamberg
Klosterbräu is at Obere Mühlbrücke 1-3 and is described by Bamberg Tourism as Bamberg's oldest active brewing site. The name sounds monastic, but it is important to be clear: this is not a brewery inside an active monastery today. The brewery is in the Mühlenviertel directly on the Regnitz.
What to order: Braunbier, Schwärzla, Kellerbier or Rauchbier, depending on availability.
Address: Obere Mühlbrücke 1-3, 96049 Bamberg
Note: closed Monday and Tuesday according to Bamberg Tourism and Bierland Franken.
8. Ambräusianum
Ambräusianum is a brewpub at Dominikanerstraße 10, right in the old town and close to Schlenkerla. According to Bamberg Tourism, three main beers are brewed and served there: Helles, Dunkel and wheat beer, with Doppelbock seasonally.
What to order: Ambräusianum Hell first, then Dunkel or wheat beer.
Address: Dominikanerstraße 10, 96049 Bamberg
Note: very central, therefore more tourist-facing than Wunderburg or Greifenklau.
9. Kaiserdom
Kaiserdom is the major Bamberg brewery in Gaustadt, Breitäckerstraße 9. For a classic old-town brewery walk, Kaiserdom is less obvious than Schlenkerla, Spezial, Fässla or Klosterbräu. But as a brewery, Kaiserdom clearly belongs to Bamberg beer culture. Bamberg Tourism lists beers including Premium Pils, Meranier Schwarzbier, Alt-Bamberg Dunkel, Weizenland and alcohol-free Prostel.
What to order: Weizenland, Schwarzbier or Alt-Bamberg Dunkel, depending on what is available.
Address: Breitäckerstraße 9, 96049 Bamberg
Note: for visitors, this is more a brewery and beer brand than a classic old-town tavern stop.
Known Beer Places, but Not Active Brewery List Entries
Wilde Rose Keller
Wilde Rose Keller is an important seasonal beer cellar on the upper Stephansberg. But it is not an active brewery visit in the classic sense. Bamberg Tourism lists the Keller season from 23 April to 30 September. Please check current beer service directly with the Keller.
Bamberger Hofbräu
Bamberger Hofbräu is historically important, but the former Hofbräu AG Bamberg stopped production in 1977. Today's Hofbräu Bamberg at Karolinenstraße is a restaurant serving regional beers and wines, not an active Bamberg brewery in the sense of this list.
How to Do Bamberg Properly
Day 1: Old town and smoked beer. Schlenkerla, Spezial and Klosterbräu work well together. Add a walk through the old town, the Regnitz and the cathedral hill.
Day 2: Wunderburg and beer cellars. Mahrs and Keesmann are almost next to each other. After that, Greifenklau or, in summer, a beer cellar such as Wilde Rose or Spezial-Keller fits well.
Practical Tips for Bamberg
- Bamberg is compact, many brewery inns are walkable
- Still allow enough time for Wunderburg and Stephansberg
- Arriving by train makes sense, especially if beer is the main reason for the trip
- Check opening hours directly before visiting, especially Sundays, Mondays and brewery holidays
- According to Bamberger Brauereien e.V., stag and hen parties are not served in the brewery inns
Where to Stay in Bamberg
For a brewery-focused stay, choose the old town, the station area or somewhere within walking distance of Wunderburg. That way you do not need a car in the evening.

Conclusion
Bamberg is one of Franconia's strongest beer destinations. But the guide should stay clean: active breweries, historic brands, restaurants and beer cellars are not the same thing. If you want to understand Bamberg as a beer city, start with Schlenkerla and Spezial, go to Wunderburg for Mahrs and Keesmann, and leave a second day for Klosterbräu, Fässla, Greifenklau, Ambräusianum and Kaiserdom.
